When Life Gives You Lemons…

Holy cow! What a week it’s been!! I’m exhausted. Physically and mentally. I wish I could sleep this rainy weekend away. But I’m a mom so that’s not happening! While I’m nursing Dylan and getting him down for a nap I’ll share the latest updates on our circus of a life:

Last week we had some crazy high temperatures so naturally, our central air system broke. This is while we are battling a really annoying cold that is going through the entire family. Then Chris discovered his car has an oil leak. Then for the (hopefully!) grand finale, my oven broke!! At this point I’m just laughing because really?!

The cold virus is still lingering but our air conditioning is fixed. Right in time for this 40 degree weekend (haha!). Chris and I went with the little boys to Home Depot on Friday. I can’t tell you how much fun that was. Logan decided he was in the mood to cry that day. We could hardly speak to the sales associate that was trying to help us. We got the lay of the land appliance wise and I ended up settling on a Samsung stove. Thanks to COVID, everything is on back order, there isn’t one appliance package fully in stock. No matter which oven we chose, at least one of the matching pieces will be missing. This Samsung set had the fridge unavailable but no big, don’t need it right now anyway. So we signed up and went home. That afternoon I started to do some research and I realized this Samsung package really wasn’t going to work best for us. The fridge wasn’t going to be quite what we would need when we finally did get it. The dishwater had absolutely awful reviews. Oye Vey! This led to Chris and I going down a rabbit hole of cheese drawers and ice makers and French doors vs side by side. WiFi capable?! Craft ice makers?! Who knew! So we decided to sleep on it and when I woke up the next morning I had my decision.

My saint of a husband called Home Depot and cancelled our original order. We placed the new order online. Our LG appliance package minus the dishwasher will arrive July 9th! The dishwashers are unavailable with this brand but that’s perfectly okay because we had to replace ours only a few years ago. I can live with a mismatched dishwasher especially since I love the one I have. This appliance ordeal was a little nutty thanks to COVID and because of the fact that it was unexpected so we didn’t have any prior research done. However, Chris and I did it without a single argument! We had been talking about replacing them for over a year, he kept offering to do it and I kept saying “let’s wait.” Minus the dishwasher, the appliances we have are 16 years old and for 10 of those they were used by the family that we purchased this house from. As much as I didn’t want to do this right now, it’s certainly due! With 24 months interest free financing and Memorial Day sales, it couldn’t have happened at a better time. I can’t wait to do a post/review when my new set arrives!

To make lemonade out of all these lemons, I’m going to try my best to document our month of living without an oven. Chris offered to buy a countertop one to get us by but as of now I’m up to this challenge! I have a crock pot, an air fryer, toaster oven and the stovetop still works so I think we’ll be good! I’ve done just fine so far but I’m wondering when I’ll finally say “I’ve had enough!” This year I’ve really knuckled down and focused on cooking. I’ve always been okay at it but my skills were pretty limited. I’ve watched too many hours of Food Network and I’ve gained a lot of knowledge from watching a variety of shows. I have branched out so far beyond my cooking comfort zone and it’s been great! Some weeks my waistline won’t agree but I do try my best to balance healthy and light dishes with hearty and savory ones. Anyway, back to my newest challenge. I’m confident I’ve gained enough of a skill set and knowledge to make this month without the oven fly by! Another plus, it’s the start of summer which means it’s grilling season! I can’t wait to share some of the recipes I come up with during our oven-less month so if you ever find yourself in a similar situation you’ll have something to refer to! Pray I make it through this and my optimism perseveres!
